Mushroom & Turkey Tacos

Ingredients

  • 8 oz of your favorite mushroom
  • 1 lb ground turkey
  • .5 onion
  • 2-5 garlic cloves
  • .5 cup raw walnuts
  • 1-3 tomatoes
  • 1-2 avocados
  • 1 tsp chili powder
  • 3 tsp ground cumin
  • 2 tsp ground paprika
  • 1 lime
  • salt & pepper to taste
  • taco shells

Instructions

  1. Saute onions and garlic.

  2. Chop mushrooms very small or pulse them in a food processor.

  3. Crush walnuts or put them in a food processor with mushrooms. Mix mushrooms and walnuts together and saute them with onions and garlic until soft. Set aside.

  4. In the same pan, cook ground turkey until cooked. Then add the mushrooms and spices to the pan util mixed evenly.

  5. While turkey is cooking chop tomatoes and avocados into small cubes. wash and chop parsley and slice the lime

  6. Serve with taco shells, tomatoes, avocado, parsley and lime juice.
